ABOUT US

FAMILY BUSINESS

Sushi Craft, founded in 2002 by our dad, Takayasu Takemoto, shared Japanese cuisine across the North West of England for more than two decades. In 2025, the new generation has taken over and relaunched the business under a new name - Takebon 武ぼん - a tribute to our family roots.

Introducing Takebon by Mia & Brett (and of course, with continued inspiration from Taka.)

JAPANESE FLAVOURS, BRITISH INGREDIENTS

While honouring the taste, joy and beauty of traditional Japanese dishes, we also celebrate local British produce.

Our menu evolves with the seasons, to ensure the freshest, highest-quality ingredients - a true fusion of Japanese tradition and the best of British produce.

MINDFUL OF WASTE & THE ENVIRONMENT

Guided by the Japanese concept of ‘mottainai (もったいない)’ — a deep respect for resources and a desire to avoid waste —, our pre-order sushi service model helps reduce food waste and ensure freshness, allowing us to serve quality sushi responsibly.

We use local ingredients where possible, sourcing seasonal produce from our family allotment. We also support more sustainable fishing practices. Keep an eye out for creative menu items that reflect these values - like our trout ochazuke or pickled rhubarb onigiri!
